Vegan Caesar Salad

Dressing:

4 x TBSP tahini

1 x lemon juiced

2 x TBSP nutritional yeast

½ x TSP dijon mustard

½ x TSP minced garlic

Pepper and water to thin



Base:

3 x cups kale chopped

½ x head of lettuce

⅓ x red onion

1 x large sprinkle vegan parmesan



  1. Prep dressing by whisking all the ingredients together and adding water to thin.

  2. Wash and chop greens and add to a large bowl. Thinly slice the red onion and toss in a bowl. 

  3. Add dressing and mix again. Sprinkle in parmesan and top with more pepper.

Optional: serve with grilled mock chick’n or croutons if desired!

This recipe is based off the Veggiekins Chickpea and Ceasar salad, served with the same dressing.
