Quinoa salad with raw seasonal veggies

Salad:

1 x cup quinoa (cooked and cooled)

1 x can edamame (or white beans)

2 x mini cucumbers (sliced)

1 x zucchini (sliced)

1 x yellow squash (sliced)

3 x radishes (sliced)

1 x cup spinach 


Dressing:

1.5 x lemons juiced

2-3 x TBSP EVOO

½ x shallot (finely minced)

½ x TBSP minced garlic

½ x TSP maple syrup

Salt and pepper

  1. Toss all salad ingredients in a large mixing bowl. 

  2. Add all dressing ingredients to a jar and shake or add them to a bowl and whisk.

  3. Pour the dressing over the salad mix and enjoy!
