Strawberry Cous Cous Salad

Dressing:

2 x Shallots (Minced)

1/4 cup x Rice Vinegar

3 TBSP x Stone Ground Mustard

1/3 cup x Olive Oil

Salt and Pepper

Base:

Basic Cous Cous (recipe hyperlinked)

2 x Radishes (sliced)

1 x Bell Pepper

1/2 cup x Tomatoes

3 x Carrots (peeled)

1/2 x Red Onion

4 x Strawberries

1 x Avocado

Top:

1/3 cup x Nuts (I used Walnuts!)

  1. Combine all dressing ingredients before setting aside and starting the cous cous. Prepare the vegetables and set them aside in a bowl or container.

  2. Once the cous cous is prepared, add to bowl before topping with the prepared ingredients, sliced avocado and lastly crushed nuts.

  3. Enjoy!
