Vegan Skordalia (Greek Potato Dip)
5 x small potatoes
7 x garlic cloves
2 x tbsp olive oil
2 x juiced lemons
Chives, salt and pepper to top
Quarter and boil potatoes, add all other ingredients to a blender
Once fork soft, add potatoes and ¼ cup of the liquid to the blender
Blend until smooth
Top with olive oil, chives, salt and pepper
