Vegan Skordalia (Greek Potato Dip)

5 x small potatoes

7 x garlic cloves

2 x tbsp olive oil

2 x juiced lemons

Chives, salt and pepper to top



  1. Quarter and boil potatoes, add all other ingredients to a blender

  2. Once fork soft, add potatoes and ¼ cup of the liquid to the blender

  3. Blend until smooth

  4. Top with olive oil, chives, salt and pepper
